Cleaver

First launched in October of 2021, this heavyweight initially sold out in just five hours. Back again for a limited time, the Cleaver is full tang, meaning the blade extends all the way from the tip of the knife through the hilt of the handle for a perfectly balanced performance.

Inspired by old-school butcher shops, it’s optimized for cutting extremely close to the bone, chopping through tough tendons, and can tackle thick-skinned vegetables.

The Cleaver is crafted in Thiers, France, where a 5th generation bladesmith hand-finishes the Olive Wood handle. It comes with an olive green leather sheath that’s tanned and finished in the Netherlands.

Is the Cleaver dishwasher safe?

To preserve the integrity of the Olive Wood handle and the steel blade, we strongly recommend hand washing only. Simply rinse with warm water and mild soap, then dry thoroughly.

How do I care for the Olive Wood handle?

Hand wash the handle with mild dish soap and water and dry thoroughly after washing. Avoid soaking the handle in water. Occasionally apply a small amount of food-safe oil (such as mineral oil) or Wood Conditioner to maintain handle appearance and prevent drying or cracking.

How should the Cleaver be stored?

Each Cleaver includes a custom Olive Green Italian leather sheath, handcrafted in the USA, to protect the blade and ensure safe storage in drawers. The Cleaver fits on our Countertop Knife Block and can also be safely hung using the circular cut-out in the blade.

What does "X50CrMoV15 NITRO+" steel mean for performance and durability?

X50CrMoV15 NITRO+ is a high-carbon stainless steel enhanced with nitrogen for improved edge retention and corrosion resistance. It offers a Rockwell Hardness of 56+, striking a balance between toughness and sharpness ideal for heavy chopping.

What can the Cleaver be used for?

Traditionally used for butchery and breaking down whole animals, this Cleaver combines the best parts of vegetable and meat cleavers. Its thick top is powerful enough to slice through thick steaks or chop hearty vegetables, yet lightweight and precise enough for a julienne. The flat head is loved by chefs for easily crushing aromatics like garlic and ginger, and can even be used in lieu of a bench scraper for transferring ingredients from your cutting board.
